David Dewar has been appointed Director of Conference and Catering Services of Sofitel Brisbane .
Formerly Director of Sales for Surfers Paradise Marriott Resort, Dewar started his hospitality career at Brisbane Hilton Hotel as an executive floor butler and left as director of catering ten years later. He joined Marriott hotels in 1998 as part of the pre-opening catering department team for Brisbane Marriott and has also held Director of Group Sales and Catering and Senior Sales Manager positions.
The five star Gold Coast International Hotel has appointed Welshman Paul Griffiths as sous chef. A former junior Welsh chef of the year finalist Grifttiths has spent three years at Palazzo Versave as sous chef of Vanitas and Vie Bar and Restaurant.
Champion Victorian Culinary Team member and twice gold medal winner of the Australian Salon Culinary Team Award Andy Cheah has been appointed the new executive chef at Royal Pines Resort. Cheah, who recently returned to Australia after several years at the Raffles Grand d’Angkor and Raffles Le-Royal in Phnom Penh is the former executive chef of the Crown Casino Melbourne. Cheah is set to play a large part in the refurbishment of the restaurants, lounges and convention centre at the resort.
