Meet Jacinta Cannataci, Chef on the Australian National Pizza team

GoHospitality talks with pizza chef Jacinta Cannataci about her experience as a pizza chef and her experience competing in the Pizza World Championships for the first time.


How long have you been a pizza chef?
For 7 years I have been working in a pizza restaurant and also working in top end of catering, but initially I'm a qualified chef. 

Where are you currently working?
Hugos

What is your favourite type of pizza to make?
Savoury and dessert pizzas. You can check out my recipes for each of the pizzas!

What is your favourite type of pizza to eat?
Salmon pizza with black caviar and mascarpone cheese

When did you know that this was your passion?
I have had a passion for cooking from the age of 7. My father gave me the inspiration of being a chef. Dad was not a very well man and he had a heart a attack but recovered well after the surgery, but he did have to retire. Through his recovery he was always in the kitchen making these amazing dishes that were self-taught. He never had the opportunity to cook in the kitchen when he was younger. Dad used to make me and my twin sister sit down on the stall in the kitchen and teach us how to cook, and we had so much fun cooking with him.. I said to him, "Daddy, when I get older I want to share your amazing food the you taught us to the whole world." The smile on his face is one I will never forget. From this day a we both continue to carry on the passion. We all need to eat. Food is all about passion, bringing family and friends together and of course love.

Is there an area that you wish to explore more?
More of the world. Travelling teaches me the culture and the story of where these dishes come from. The world is my teacher.

What do you think the judges are most looking for?
Dough, Flavour and presentation.

How did you get chosen to be part of the World Pizza Championships and representing Australia here?
We did a comp at Melbourne dolce Italia, and I came first in the dessert category .

How would you describe yourself in 3 words?
passionate,easy going and loving.

Do you have a bad quality at work?
I think I work too much

Likes and dislikes of your job?
I love my job!

If you weren't working, where could people find you?
They could find me shopping! 

What is the most interesting place you have cooked at?
Peru

If you could live on one food for the rest of your life what would it be?

Sushi

What is one item of clothing you cant live without?
Shoes!

Who is your biggest inspiration and why?
I have worked at Quay, Bennelong. Ocean room, Wildfire, hugos bar pizza and hugos catering and it has been an amazing journey.. I have worked with the most talent And amazing chefs for the last 13 years of my career and every single one of them gave me the inspiration.. I'm so blessed to have been working with them and to continue to carry on the passion.
