GoHospitality talks with pizza chef Marco Paterno about his experience as a pizza chef and his experience competing in the Pizza World Championships for the first time.

How long have you been a pizza chef?
About 25 years

Where are you currently working?
I'm currently looking for a location to open a new venue.

What is your favourite type of Pizza to make?  
Margherita di Bufala

What is your favourite type of pizza to eat?  
Margherita di Bufala

When did you know that this was your passion?
When I started using a wood fired oven for the first time 

Is there an area that you wish to explore more?
Polish method of pizza dough

Out of the competitions you were, which one was your favourite?
S.T.G Napoletana

What do you think the judges are most looking for?
I think they're looking for everything - from the process of how you made your dough to the flour you used, the time of maturation to the sauce, cheese and the combination of the ingredients you use. 

If you could make any of those pizzas again would you change anything?  
I would have been a bit more adventurous in the pizza classique competition. 

What did you notice about the trends in the pizzas from each country?
It was set up in a way that made it very difficult to see any competitors pizzas .. Would have liked if everybody had to make 2 pizzas and leave one for the public to see and eat.

What is your favourite song? 
Shine on you crazy diamond ( Pink Floyd )

What is one of your weaknesses when you're at work?
I'm a perfectionist, which can be a good and bad quality. 

What are the likes and dislikes of your job?
I love my job, but I dislike people that don't really want to be there

If you weren’t working, where could people find you?  

What is the most interesting place you have cooked at?
At a friends house in China, because shopping for the ingredients was very interesting.  

If you could live on one food for the rest of your life what would it be?

What is one item of clothing you cant live without?
