This year at FoodService Australia Hotmix Pro introduced its newest product, which is its Josper charcoal ovens.
These commercial ovens come from Barcelona, Spain.
The unit on display at FSA was its top of the line HJX50 LBC range.
“This range of commercial ovens will suit restaurants of up to150 covers,” says Stewart Fruhwald, Sales Manager, Hotmix Pro.
The commercial ovens feature a unique spark arrester setting it apart from other ovens on the market, that eliminates any sparks going up into your canopy system.
In addition, these commercial ovens come with tongs to hat help to pull out and push in the grill rack.
“The Josper gets up to 500 degrees Celsius on start-up and then will gradually drop down to 300 degrees Celsius,” Fruhwald says. “It will last between eight to 10 hours on a load of charcoal, which is about 15 to 20 kilos of charcoal.”
There is a five-valve system that adjusts the cooking. Setting number 5 keeps the system fully open; setting number 1 suffocates and slows down the flame; setting number 3 does the general cooking.
At the belly of the Josper charcoal ovens is another vent that can be adjusted for cooking.
“The bottom vent of the Josper and the top vent together will control the flame,” Fruhwald says.
