HTN in conjunction with Hunter TAFE are proud to coordinate a chocolate master class supported by Callebaut.
Led by renowned pastry chef Dean Gibson, this apprentice-only master class will be held on Monday, 25th March from 2 p.m. to 4 p.m.
The chocolate master class is open to all apprentices and trainees.
The apprentice-only class includes chocolate tempering; chocolate handling, store and use of chocolate; chocolate tasting with Callebaut gourmand range; and the types of chocolate and the correct applications.
Gibson trained at the Callebaut International chocolate academy in Singapore and ENSP France.
He has also competed and judge in numerous international chocolate competitions, such the International Pastry Grand Prix Japan and the World Chocolate Masters France.
Bookings for the apprentice-only chocolate master class are essential, as seats are limited.
